Mediterranean Omelette

Do you love Greek inspired meals?! 

Good News!! So does your heart ❤️

The Mediterranean “Diet” or what I like to say, Greek inspired meals, includes healthy choices that can help the health of your heart which obviously helps your overall health! (Yay) and it’s crazy yummy! 

Why is that? Included in a Greek inspired meals...

Healthy fats such as olives 

Many fresh herbs and spices (limit that salt intake by replacing it with herbs!) 

Veggies

Fruits

Beans - who doesn’t love Hummus

Some dairy (Yogurts, cheese) 

Oils vs Butters 

Eat more fish - Omega 3’s and lean protein

Whole grain pastas and brown rice 

Nuts

A little Wine 🍷

Just to name a few highlights! Adding a Greek Inspired Meal to your day is just a smart idea! Do a little searching yourself and see all the benefits 👊

In this fun Omelette i added 

- sprinkle of goat cheese or feta cheese

-1/2 cup artichokes

- 1/2 cup spinach

- tsp minced garlic 

- 10 Kalamata Olives 

- 2 eggs 

- tsp EVOO

Directions: 

Warm EVOO on low heat for a few minutes in sauté pan. Add in garlic, then add in artichokes and olives. Wait about two minutes then add spinach! (The spinach will cook quickly so keep temp low. Once everything is warmed through remove and set side. Then cook two eggs (beaten) in pan, creating the omelette layer! Once cooked, add mix to the inside, sprinkle the goat cheese or feta cheese and close the “lid” of the omelette! Keep on pan until cheese has melted a bit! 

Enjoy with fresh fruit!
