Meatloaf Muffins!
- 1.5 lb of lean ground beef
- 1 cup of chopped mushrooms
- 1 cup of chopped onions
- 1 cup of cheddar cheese cubes (I used Monterey Jack here)
- 2 teas Worcestershire Sauce
- 1 TB of ground mustard
- 2 eggs
- 1/4 cup tomato paste
- 1 teas of olive oil
Preheat oven to 350. Lightly oil muffin tins so the meatloaf doesn't stick. Sauté onions and mushrooms in the olive oil. Once cooked, set aside to cool. Mix all ingredients together using your hands and place mixture into muffin tins (may not fill all 12 spots). Bake for 20-25 minutes! Done!
