How I meal prep QUICKLY and on a budget!


So I have found so much JOY in getting meals prepped for the week.

Yes..I work from home and am home with my beautiful kids.

Yes, I dont NEED to prep meals but man, does it save a lot of time and in return it gives me MORE time to do all the many things id much rather be doing outside of the dang kitchen!


Here are four bfasts and four lunches that I threw together for this coming week!

All for roughly $25!


You cant even imagine how many times I hear the words...

"I would love to eat healthy, I just cant afford it."


Guys...I am going to tell you a few tips and tricks I do to help my budget AND stay on a meal plan that works.


So what do I have in these containers.


For bfast I made:

Turkey Sausage links with Bfast Potatoes, Broccoli (or green beans) and Cantaloupe


I LOVE the Applegate nitrate-free turkey sausages (3 links per serving and 10 in a box) ($5.49) so for one of the four bfasts I scrambled 2 eggs ($.60) I microwaved a bag of broccoli ($1) which went into 2 of the 4 containers and I put green beans in the last container. For the beans, I bought the Huge 32oz bag ($7.19) and I boiled them. I also packed most of the green beans for lunches and will give the rest to the kids for a few meals as well! For the potatoes I bought the microwaveable bag of Steamable Russet Potatoes. ($2.87) I used roughly 6 of the about 10 small potatoes in the bag and saved the rest of the kiddos. And lastly I made some Cantaloupe Melon balls and will eat those with my bfast. The entire cantaloupe cost $2.50 and most of it will go to the kids.


For lunch I made:

Seasoned Cod with sweet potatoes, green beans and olives.

The filet of wild caught Cod was $10 and it was 1.3lbs. I baked that in the oven with some seafood seasoning and lime juice. The green beans were from the bag I talked about before, the sweet potatoes were from a Steamable Bag that I threw into the microwave ($2.87) and I used 2 of the 7 in there, so more left overs for the kiddos or our dinners this week! And the can of olives was $1.


Total Prep time... 45 minutes.

I baked the Cod and microwaved everything else, except the green beans which I boiled on the stove. Then I melon balled the cantaloupe and packed everything up. So simple, so quick.


So when you include ALL The food I portioned into my specific meals + all the food I now have ready for the kids, the total comes to $33.52...

BUT I only portioned out

1/2 of the melon

3/4 of the green beans

6 of the 10 small russet potatoes

2 of the 7 sweet potatoes

so it roughly comes to $25 for everything I will be eating!


Yes, my veggies are not organic this week.

Yes, I choose to microwave a bunch of these foods.

But all in all, my meals are healthy, delicious, they fuel my body and are NOT hurting our budget...and it took me no time at all to get this ready for the week.


I call that a definite Win.
