Getting Creative for Pizza Night!

Every Friday we have Pizza & a movie night here at our house which makes it super fun for this Gluten and Dairy Free Momma <3 So I get creative! Here is what I came up with last night and it was delicious:




  • 1 Brown Rice Wrap (I LOVE the Food for Life Brown


Rice Tortilla's because they are non-GMO, made from organic brown rice flour, and 1 wrap is 130 calories)

  • Pesto for the base sauce (I made a simple Vegan pesto with 3/4 cup cashews, 1 cup basil, 1/4 cup of fresh cilantro, 1 1/2 Tablespoon of minced garlic, 2 Tablespoons of lemon juice, 1 to 2 teaspoons of sea salt). I actually made this the day before for a chicken dish my hubby and I had.

  • Chopped up my organic veggies into nice bite size pieces 1 yellow pepper, 1/2 medium yellow onion, about half a carton of mushroom's

  • Sauté the veggies in a teaspoon of Evoo or Coconut oil and cook until the veggies are soft

  • Cook 3 slices of no-nitrate turkey bacon and crumbled them

  • Layer everything onto your wrap

  • Sprinkle a vegan mozzarella cheese on top (which ever brand YOU love! Vegan cheese can be tricky but I can recommend Daiya & So Delicious and I tried a new one yesterday called Good Planet which was probably the BEST tasting but difficult to melt)


We grilled it for about 15 minutes until the pesto bubbled (or you can pop it into the oven at 350) Then I broiled it a bit to melt the cheese (keeping an eye on it so it didn't burn the wrap) Other vegan cheese MAY melt on the grill or in the oven without having to put it in under the broiler!
