E A S Y P E A S Y Egg Cup Recipe: 

1 cup chopped mushrooms 1 cup chopped zucchini 1 cup chopped orange pepper 8 eggs  salt and pepper to taste

S I M P L E Directions:  1) Pre-heat oven to 350  2) Grab cupcake muffin tray and coat cups with olive oil so the egg doesn't stick! 3) Crack and whisk eggs in a large bowl - add S&P to eggs 4) Chop up all veggies  5) Add veggies to eggs and whisk all together!  6) Add egg mixture to each cup leaving a little bit of room at the top! This will fill all 12 cups  7) Cook for 20-25 minutes depending on your oven!  8) REMOVE immediately from tray and place on cooling rack
