Catfish Tacos!

Here is a fish taco recipe that you do not need to prepare a fancy sauce for and it will still be delicious!

Ingredients:

  • 1 filet of catfish

  • 1 yellow pepper, chopped

  • 1 red pepper, chopped

  • 1 small yellow onion, chopped

  • 1 clove of garlic, minced

  • 1 teas of EVOO

  • Spray olive oil

  • Old Bay seasoning

  • 4 tablespoons of Pico De Gallo (I snagged mine, premade, from the vegetable section at the grocery store!

  • 4 corn tortillas (or flour if u are not GF)

  • Cilantro to garnish if u like it!

Instructions: 1) Add the Catfish to the air-fryer. I then sprayed the fish with a bit of olive oil cooking spray and sprinkled Old Bay on top. Cook for about 20 mins on 375 or whatever degree you typically air-fry fish . If u don't have an air-fryer...first, invest in one...they are awesome! Second, don't sweat it, just bake the Catfish!

2) Dice up the peppers and onions and add them to a pan with the EVOO & minced garlic. Cook until the onion is translucent. Keep veggies on low once cooked.

3) Once the fish is done, add it to the pan with the veggies and break it up into bit size pieces. Then gently mix it all together.

4) Warm your tortillas in the microwave for 15 secs and add about 1 tablespoon of Pico De Gallo to each taco soft shell.

5) Divide the fish veggie mixture into four parts and add each part to the four tacos!

6) Top with cilantro if u are a fan!
