It's July 1st and I know y'all are excited for this Holiday Week!! Summer is flying by!
As we start to think about all the fun sides, apps, desserts, etc we want to bring to this year's BBQ, I thought it might be helpful if I compiled a Blog Post of some healthy recipe ideas for you!
First up!
These DELICIOUS go-to healthy recipes from one of my FAVORITE Bloggers, Nancylynn at Confessions of a Fit Foodie!
Pulled Pork with Maple BBQ Sauce - This recipe makes a ton and creates leftovers for lunches all week, too!
Fave Burgers + Burger Sauce - Lettuce wrapped, in a bun, or on its own, the Burger Sauce is absolutely delicious!
BBQ Chicken Burgers - a great alternative to a traditional burger.
Maple BBQ Chicken Thighs - let them marinate in the Homemade BBQ sauce then toss on the grill!
Cilantro Lime Slaw - No-mayo coleslaw with a different flavor profile for a yummy spin on the BBQ classic!
Chicken Caesar Pasta Salad - Yummm is all I have to say about this newer-to-the-blog recipe!
Mexican Street Corn Salad - This recipe will definitely be a hit at the party!
Quinoa and Black Bean Salad - So, so good! Also dairy free and gluten free!
Greek Pasta Salad - This salad has HUGE portions and tons of veggies for a delicious crunch.
Healthy Ramen Noodle Salad - total crowd pleaser!
Cucumber Tomato Salad with Avocado and Feta - A fun spin on the traditional salad with the addition of avocado, feta, and a yummy, honey lemon dressing - so light and yummy for summertime!
Mediterranean Chickpea Salad - This is a huge winner for a crowd. Keep the olives and feta on the side to make it even more picky eater friendly!
___________________ Next up! Recipes straight from BODi that are sure to WOW! Watermelon Aqua Fresca! Serves: 4 (approx 1 1/2 cups each) Prep Time: 10 min
Container Equilvants (per serving): 💜
4 cups cubed watermelon
3 cups water, divided use
½ cup fresh basil leaves
2 Tbsp. fresh lime juice
1 Tbsp. honey
1 dash sea salt (or Himalayan salt)
Ice
1. Place watermelon, 1 cup water, basil, lime juice, honey, and salt in blender; cover. Blend until smooth.
2. Strain watermelon mixture through cheesecloth (or a fine mesh strainer). Discard solids.
3. Add remaining 2 cups water to watermelon mixture; mix well.
4. Serve over ice.
Spinach and Artichoke Dip (CHECK serving size!!! Make sure to make this big enough to feed a crowd)
